Quickie Weeknight Recipes

There are several books I have seen that give you instructions on how to process canned meat, but they stop there. They don’t tell you what to do with it after you have it in your pantry. Some of you may just be interested in having beef on hand for an emergency, but eventually you will want to cook it, right? For our family, I like to have the home canned beef cubes on hand so that I can make a good supper meal quick, fast and in a hurry after working all day and dealing with evening traffic.

My idea here was to give you a wide variety of recipes to try with your first batch of beef. If you have beef about twice a week like we do, you have enough recipes here to easily go a more than month without repeating a recipe. I have tried to include a wide variety of recipes. Some are down home recipes that have been passed down through the generations in my family. Others are recipes I have “figured out” from eating at restaurants, then going home and reinvented them using the canned beef. There are also a couple of recipes I have picked up on some of my world travels, one recipe is from Russia and the other from West Africa. There are stories to go with the recipes, but they are certainly optional and I’ve placed links straight to the recipe so that you aren’t required to wade through the story when you get ready to use the recipe.

My intent is to help you store healthy home processed foods and get supper on the table easily and quickly. It is also my aim to help you save money. Some of these recipes are recommended to be served over rice or buttermilk biscuits. Quick cooking rice, frozen or canned biscuits, or biscuit mix are all fairly low cost items. But they are all a good bit more expensive than regular rice or making your own biscuit mix. You may already be cooking regular rice to save money and improve flavor. You may already be making your own biscuit mix or making biscuits from scratch. However, I’ve written this book for everyone who is interested canning beef, so I wanted to be sure to put some simple instructions in here for those who are new to cooking “real” rice and making their own biscuit mix. If you don’t want or need them, just consider them extras that are there for those who need a bit more help.

I’ve also included instructions for preparing brown rice. I love the taste and texture of brown rice. But, there is a trade-off. You won’t have dinner on the table in 30 minutes when you make brown rice. A little extra time will need to be allowed, but it isn’t time that needs a lot of active participation. Once you get it going, it cooks itself. I just thought I would include it for those who prefer brown to white and are willing to make the trade-off in time.
